Beneath pine and oak
Agave maximiliana grows wild among the trees, in its natural ecosystem. The shade, the altitude and the soil of the Sierra give it aromas and flavors no plantation can reproduce.
Western Sierra of Jalisco · Los Declives region
Agave Maximiliana that grows beneath the pine and oak forest, with no agrochemicals, distilled the way it has been done in the Sierra for generations.
About us
We produce raicilla in the Los Declives region, high in the Western Sierra of Jalisco: a land of steep mountains, winding rivers, waterfalls and deep ravines, small valleys and peaks that point to infinity.
Our agaves come from natural forests with authorized sustainable harvesting, where repopulation is encouraged through natural regeneration and planting. We use no agrochemicals: the raw material is the forest itself.
Every batch is distilled by our master raicillero, Manuel Salcedo Gutiérrez, and rests in glass before being bottled and numbered, batch by batch, bottle by bottle.
Forest-grown agave
Agave maximiliana grows wild among the trees, in its natural ecosystem. The shade, the altitude and the soil of the Sierra give it aromas and flavors no plantation can reproduce.
No synthetic fertilizers, herbicides or pesticides. What reaches the still is only agave, water and the time it takes to mature.
We work on land with authorized sustainable harvesting. For every agave harvested, repopulation is encouraged through natural regeneration and planting.
Our brands
